2. Cut all vegetables and add cheese together in a bowl. Drizzle in olive oil and use hands to mix ingredients together evenly. Place vegetable mix into a well-oiled baking tray.
3. Whisk eggs and milk together. Add self-raising flour and mix well (ensuring there are no lumps).
4. Pour egg mixture over vegetables. Top with finely chopped bacon and sprinkle over salt and pepper.
5. Bake in the oven for 30-35 mins or until golden brown and cooked through.
