Penne with Ricotta and Basil Sauce

Ingredients

Directions

1. Heat oil in pan add bacon, garlic, onion and shallots and stir over med heat for 5 mins or until cooked remove from the heat stir in ricotta and basil.
2. Meanwhile cook pasta as per pot directions until al dente, just prior to draining the pasta add about a cup of pasta water to the ricotta mixture to thin sauce add more water if you prefer a thinner sauce season well.
3. Drain pasta stir through sauce and tomato halves.
