In a wok or frying pan, cook chicken mince with diced onions, garlic, and mushrooms. Put aside to cool.
Lay wonton wrappers out on bench/wooden chopping board. Wet edges of wonton wrappers with water using a finger. Place a small spoonful of cooked chicken minced in centre of the wrapper. Fold corners together and squeeze.
Heat oil in a wok/frying pan until hot. Place wontons into oil and fry until golden brown.
Remove from oil and place on paper towel to drain.
Serve in a bed of lettuce (5 wontons per serve).
