Directions

1. Preheat your fan forced oven to 160°c. Grate your carrot, dice your capsicum, and cut up the spinach and ham.
2. Mix all the ingredients in a large mixing bowl including the whisked egg.
3. Scoop your ingredients into a non-stick muffin tin.
4. Bake in the oven for 35 minutes. Remove muffins from oven. Take out of muffin tin and allow to cool for 5 minutes.
