Chop cabbage, fresh parsley, basil leaves, and greens (any greens will work). Chop fine.
In a small glass bowl add your lime juice (note: it needs to be fresh here, no juice concentrate), extra virgin olive oil, 6mm thick slice of blue cheese and a generous teaspoon of good quality French mustard. Mix thoroughly with a fork until the dressing is creamy and blended.
Toss the sauce into the slaw well, get it right into every section of the leaves.
