Banana & Date Bread
Beautiful and delicious moist banana bread.
3 tbsps smooth peanut butter
30 ml lemon juice
5 extra large eggs
2 tsps cinnamon
1 dash salt
1/2 cup coconut flour
3 <span class="measurestring" title="medium (18 cm - 20 cm long)">medium</span> bananas
8 medjool dates
1 tsp bicarbonate of soda
Preheat oven to 180 °C. Grease and line a loaf tin.
Blend the bananas and dates together until smooth.
Add the remaining ingredients and mix until well combined.
Pour mixture into the prepared tin. Bake for 60 minutes or until an inserted skewer comes out cleanly.
