1. Spray pan with olive oil and over medium high heat sauté the onion, garlic, celery and capsicum until softened but not browned. Remove from heat and allow to cool.
2. In a bowl combine the chicken mince, egg, cooled vegetables, finely chopped herbs, salt and bread crumbs.
3. Stuff into chicken cavity and tie legs with kitchen string. There will be a small amount over, place in a ramekin and bake for 20-30 minutes at 180 °C.
