Thai Chicken Warm Salad
Chicken, rice, beans and zucchini.
250 g brown rice & quinoa
20 g dry roasted almonds
95 g green string beans
300 g chicken breast meat
20 ml fish sauce
20 ml sweet chilli sauce
20 ml lime juice
150 g zucchini
Chop and cook chicken in a pan with a drizzle of oil.
Grate and lightly steam zucchini in microwave.
Chop and lightly steam beans in microwave.
Cook rice and quinoa according to package directions.
Mix chilli sauce, lime juice and fish sauce together.
Add all ingredients into a bowl or platter and toss together.
Note: add some mint leaves for added flavour and serve with lime cheeks.
